Every Catholic should embrace Earth Day for the same reason they should embrace all else that is natural to us.
I find it tragic how Catholics shun the wonderful ordering of the material world, including our ordering within it.
The pagans who embrace Earth Day et all are akin to the Druids, when they finally discover the Faith they will change the world into a Catholic world because they have a Catholic disposition, sans the Faith.
